Cooking classes for professionals
Seven days full of relish, culinary discoveries and hands-on
La Gioia not only stands for the Piccolo Paradiso, where you can relax wonderfully, but also for a place of culture in the broadest sense. The art of cooking, eating and drinking are also part of this. In our intensive professional courses, we not only teach the craft of Mediterranean cuisine, but also provide an insight into the cultivation of raw ingredients as well as the magnificent culture of Umbrian wines and olive oil.
THE COOKERY LESSONS
From 5 to 6 hours of practical lessons per day in our professional kitchen.
Goal: Preparation of classic Italian menus consisting of:
"Aperitivo", "Antipasto", "Primo", "Secondo" with "Contorno" and "Dolce".
Instructor: La Gioia's wonderful chef, Gianni Molti.
Language: Italian with interpreter.
You will receive the detailed concept including all menu suggestions after your enrolment.
THE MEAL TOGETHER
You can enjoy and discuss the results of your work over lunch and dinner together in our cosy "Sala rossa", next to the open fireplace. Served by our charming sommelier Simone
Militoni.

WINE TASTING
Visit to an important winery in Montefalco with tasting of various local wines.
You will be accompanied by our sommelier Simone Militoni.
Language: Italian and English.
EXTRA VIRGIN OLIVE OIL
Walk through our olive groves, visit to our modern oil mill of trust, film and discussion about the know-how of the production of a real "extra virgin". Tasting of various olive oils.
Accompanied by Daniel Aerni.
Language: German and Italian.
THE SHEEP'S AND GOAT'S MILK DAIRY
Visit to a dairy with tasting of different varieties.
You will be accompanied by our sommelier Simone Militoni.
Language: Italian and English.
OTHER EXCURSIONS (2 to choose from based on availability)
- Visit to another winery with tasting
- Visit to the "Mastri Birrai" brewery in Gualdo Cataneo with tasting
- Visit to the small "Green Heart" distillery in Trevi with tasting of various gins and bitters
- Professionally guided excursion to one of the most beautiful Umbrian towns with its typical architecture.

THE COURSE INSTRUCTOR – A MASTER OF HIS TRADE
Born and raised in Umbria, I trained in the 1980s in Milan at the school of the great Gualtiero Marchesi and then continued my career with very important stops in Italy and abroad. To name just a few: "Tre Vaselle" in Torgiano, Umbria; "Don Chisciotte" in Florence; "Enoteca Pinchiorri" in Florence; "Tonnara" in Castellammare del Golfo in Sicily; "Spa Luciano" in the Republic of Tatarstan-Kazan in Russia.
After many years of travelling and a wealth of experience as a chef, I returned to my home town of Spoleto to devote myself to new projects. I met Marianne and Daniel Aerni, the owners of the enchanting "Agriturismo La Gioia", where I have been head chef for 2 years. I look forward to sharing my vast experience and love of Italian cuisine with you here, in this special place.

THE WINE CONNOISSEUR AND CHEF DE SERVICE
When I was asked as a child what I wanted to be when I grew up, I always talked about food and wine. I wanted to work in the hotel trade. I gained my first experience in restaurants at the age of 14, in a wide variety of areas. I wanted to discover all the secrets of the hospitality industry! In fact, I graduated from the Spoleto hotel management school.
Over time, I became more and more interested in wine and so I began training as a sommelier, which I completed with the AIS. I then worked in various renowned restaurants in Umbria as a sommelier and head waiter until I discovered "La Gioia" three years ago, where I still manage the wine cellar, restaurant and service independently today.

- For train travellers: Transfer from Foligno or Spoleto railway station to La Gioia

- Accommodation costs at La Gioia
Accommodation in La Gioia is compulsory for course participants.
Since our flats and their prices vary widely, we ask you to consult our hotel price list.

WEDNESDAY IS YOUR FREE DAY
No lunch and dinner in La Gioia. We will be happy to give you tips for excursions and good restaurants.
ACCOMPANYING PERSONS NOT PARTICIPATING IN THE COURSE
For your accompanying persons staying in the same appartement, we charge for accommodation and meals
€ 100.00 per day per person.
